Holiday Molasses Cookies

I must admit, it has been a little difficult getting into the Christmas Spirit this year. The fact that I can wear shorts and frequent the beach at this time of the year still blows my mind. There are flowers in bloom everywhere, an orange-laden tree in the yard, and nary a snowman in sight. The kids really had to nag us to put up the tree and lights. I am making a go of it though by replacing my Beach Boys cd with the Nutcracker. And, this afternoon I finished eating fresh fruit and avocados and vowed to make gingerbread cookies with my kids. Here is one of my favorite recipes. The cookies turn out soft and chewy and fill the house with the irresistible aroma of the holidays.

Molasses Cookies
Mix:
3/4 C oil
1 C sugar
1/4 C molasses
1 egg

Add:
2 C flour
1/2 tsp ground cloves
1/2 tsp salt
1/2 tsp ginger
1 tsp cinnamon
2 tsp baking soda

Mix well and chill. Form into 1 inch balls and roll in sugar. Place 2 inches apart on an ungreased cookie sheet. Bake at 375 for 8-10 minutes.
